RECIPE OF THE WEEK

Here’s a fresh take on the popular fruity dessert taken from the recipe section on Pidy’s new UK website.

Peach Melba

Serves: 4

Ingredients
• 4 Pidy Trendy Sweet Round (8cm)
• 2 peaches
• 200g peach marmalade
• 400ml water
• 150g sugar
• ½ lemon
• 4 scoops vanilla ice cream (or whipped cream)
• 4 tbsp roasted flaked almonds
• raspberry sauce to serve

Method
1. Peel the peaches

2. Bring the water to the boil with the sugar and lemon juice

3. Boil the peaches for 10 minutes in the sugar water, then let them cool down in the liquid

4. When cooled, cut the peaches into thin slices

5. Fill each Trendy case with peach marmalade and arrange peach slices on top

6. Place a scoop of vanilla ice cream (or whipped cream) on top

7. Add the raspberry sauce and sprinkle with the roasted flaked almonds
