RECIPE OF THE WEEK

Boost nutritional value for those on a fortified diet and add a touch of nostalgia to the daily bake with this iron- and vitamin-rich cake from Bidfood.

Ovaltine Cake

Ingredients:

Icing
• 3tbsp Ovaltine
• 1 ½ tbsp hot milk
• 125g butter
• 250g icing sugar
• 50g dark chocolate (at least 50% cocoa solids), melted
• 1tbsp boiling water
• 20 Maltesers

Cake
• 30g Ovaltine
• 30g cocoa powder
• 225g butter, softened + extra for greasing
• 225g caster sugar
• 225g self raising flour
• 1tsp baking powder
• 4 eggs

Method:
1. Preheat the oven to 180°C/160°C fan/Gas 4. Grease and line the baking tin
2. Put the Ovaltine and cocoa powder into a large bowl, add 2 tablespoons of water and combine into a paste. Add the remaining cake ingredients and beat until smooth
3. Pour into the cake tin and bake in the oven for 20–25 minutes or until done. Allow 5 minutes to cool, then turn out the cake onto a wire rack to cool completely
4. For the icing, put malted chocolate drink powder into a bowl, then add the hot milk and mix until smooth. Add the butter, icing sugar and melted chocolate and mix again until there are no lumps and it is smooth. Then mix in the boiling water to make the icing glossy
5. Cut into squares and decorate with Maltesers.
