Carpigiani UK’s development chef achieves ‘Gelato Master’ accreditation

Over five days, Yates was trialled and tested on such topics as freezing curves, proteins, recipe balancing, and polysaccharides – to name but a few!

A leading manufacturer of ice cream making equipment has announced that its UK development chef, Joe Yates passed the prestigious Gelato Master course in Bologna, Italy.

Hosted at Carpigiani’s headquarters in Italy, the course sees gelato chefs from across the globe take a deep dive into the physical characteristics of gelato. Over five days, Yates was trialled and tested on such topics as freezing curves, proteins, recipe balancing, and polysaccharides – to name but a few! Now, the newly appointed Gelato Master is excited to share his new-fund knowledge with students takin the Gelato University courses in the UK.

Commenting on the course, Yates says: “The Gelato Master course really challenges your knowledge and skillset and takes everything up a gear. There’s a lot of focus on the physics involved during the creation of gelato recipes. It’s one thing to be able to understand the properties of a gelato mix but you also need to be able to manage and control these aspects too.

“I had such an incredible time on the course – it was an insightful and valuable experience. I have to say the highlight was having the opportunity to meet so many talented gelato chefs from around the world.

“I’d really recommend the course to experienced gelato chefs who want to explore the physical properties of gelato. I’m so pleased to have passed and I’m looking forward to using this experience to shape my classes at Gelato University so that UK businesses can benefit too.”

To ring in the New Year in true Carpigiani style, the company has released its Introduction to Gelato course dates for 2025, which can be booked online. Using the manufacturer’s equipment, the courses take students through a step-by-step process to make artisan gelato and sorbet. Students also receive a host of recipe tips and tricks, as well as learning about the profit margins thatcan be achieved when they add gelato to their menus.
