The Open Doors Programme Sustainable Supplier Spotlight: Legghorn

What is Legghorn?

Legghorn is made from 420-day-old Breeder Hen meat. An ingredient traditionally overlooked, it’s full of rich flavour and perfectly fit for the plate. Long treated as a waste product, the meat offers a compelling opportunity: it’s delicious, dramatically lower in carbon, and a smarter way to honour the whole animal.

Why do we love Legghorn?

  1. Meaningful sustainability benefits – With just 0.53kg of carbon per kilo, compared to 20-30kg for traditional beef, Legghorn has the potential to significantly reduce the food industry’s carbon footprint. At full capacity, they're targeting carbon savings of 1000 tonnes monthly – a potential of 12 million kilograms of CO₂ saved every year – that’s equivalent to taking approximately 2600 cars off the road for a year!
  2. Chef approved – Celebrated by chefs across contract catering and high-end restaurants for its flavour, Legghorn’s Red Tractor, antibiotic-free, BRC A Grade mince is not only tasty, but rich in protein, iron, zinc, selenium and vitamins A and B, making it a more nutritious choice. 
  3. Optimised for the busy kitchen – Thanks to its versatility, Legghorn mince fits into a wide range of dishes from ragù to burgers.
